Here is the Extreme Makeover Weight Loss Edition Salmon Burger recipe from Episode 2 featuring Alex. It is part of the California Institute for Health and Longevity’s Extreme Makeover Weight Loss recipe series. So tasty AND healthy!

Ingredients:

1 lb of salmon filet, cut into 4-inch pieces
1 tablespoon cilantro leaves (fresh)
1 tablespoon hoisin sauce
1/2 teasp. garlic paste
1 teasp. ginger paste, divided
1/2 teasp. kosher salt
1/2 teasp. ground black pepper
1/3 cup panko bread crumbs
4 whole wheat hamburger buns
1/4 cup mayonnaise (lite)
1 teasp. lemon juice
1/2 teasp. ginger paste
2 teasp. soy sauce (light and reduced sodium)

4 people

3 ounces protein, 2 carbs

Directions:
  • Preheat grill or broiler (High).
  • Place salmon pieces, cilantro, hoisin sauce, garlic paste, 1/2 teaspoon of ginger paste, salt and pepper all together in food processor.  Pulse food processor in order to chop salmon coarsely and then stir in the panko bread crumbs.
  • Mold ground salmon into 4 “hamburger” patties.
  • Spray grill with organic olive oil spray to keep salmon from sticking.  Place patties under broiler or on the grill.  Grill or broil for 5 minutes.
  • To make ginger mayo, mix together lite mayo, lemon juice, 1/2 teaspoon ginger paste and soy sauce until thoroughly mixed
  • Serve patties on a whole wheat bun topped with ginger mayo, lettuce, and tomato. YUM!
